APPLE CAKE

1 lb. (450 g.) cooking apples
2. oz. (65 g.) soft white cooking fat
Pinch salt
1 oz. (25 g.) chopped walnuts
8 oz. (225 g.) caster sugar
12 oz. (350 g.) S.R. flour
8 oz. (225 g.) seedless raisins
1 level tsp. mixed spice

Turn on oven at Gas Mark 3, 160°C, 325°F. Grease a round seven inch tin. Peel apples and cut up roughly. Stew apple with a little water. Cream fat and sugar. Beat in apple. Sift flour, salt and mixed spice. Fold in cream mixture, together with the chopped walnuts and raisins. Turn into a prepared tin and cook for 1 hour.

This can be eaten cold as a cake or hot with custard or ice cream as a pudding.
