Apple Fruit Cake

APPLE FRUIT CAKE

1 lb. cooking apples
Water
½ lb. plain flour
1 level teaspoon bicarbonate of soda
1 level teaspoon powdered cinnamon
½ level teaspoon mixed spice
½ level teaspoon ground ginger
6 oz. sultanas
2 oz. peel
2 oz. seedless raisins
2 oz. chopped walnuts
2 oz. chopped glacé ginger
5 oz. butter
6 oz. soft brown sugar
Rind of 1 lemon, finely grated
2 eggs
Castor sugar

Cook apples until quite soft, using a minimum of water, 1 to 2 tablespoons.

Sieve or liquidize.

Measure 8 liquid oz. (1 breakfast cup). Cool.

Grease and line base of 8 inch round or 7 inch square cake tin.

Sieve together flour, bicarbonate of soda, cinnamon, mixed spice and ginger.

Add sultanas, peel, seedless raisins, walnuts and glacé ginger. Mix.

Cream together in another bowl butter, soft brown sugar and finely grated lemon rind. Beat in eggs.

Fold in dry ingredients alternately with apple sauce.

Place in tin. Dredge top with castor sugar. Bake in centre oven Gas 3, 325°F., l ¼ hours.
