Banana Poppy Seed Loaf

2 bananas
30ml (2tbsp) lemon juice
175g (6oz) self-raising
2.5ml (½ level tsp) baking powder
175g (6oz) soft margarine
1 75g (6oz) Caster Sugar
15ml (1 level tbsp) poppy seeds
3 eggs, large

Grease and base line a 900g (2lb) loaf tin.

Peel the bananas and cut into large chunks. Place in a bowl with the lemon juice and mash using a potato masher.

Sieve the flour and baking powder over the bananas then add the margarine, sugar, poppy seeds and eggs. Beat well using an electric hand whisk or wooden spoon.

Spread half the mixture into the tin and level the surface.

Bake in a preheated oven at 180C (350F) mark 4 for about 40min. Skewer the hot loaf all over.

Leave to cool in the tin.
