CEYLON BEEF

1 ½ Ib best minced beef
2 ozs sultanas
3 onions
I dessertspoon madras curry powder
1 oz butter
Salt
Mashed potatoes
Beef stock - approx ¾ pint

Slice the onions finely and fry in the butter until golden, add the minced beef and fry for a few minutes.

Salt to taste. Put into casserole with suit-arias. Cover with stock and cook in moderate oven (fan oven I8OC, 350F) for about 1 hour. Take out and allow to cool slightly. Make a thickening with plain flour and curry powder and mix well into the mince mixture. Cover with mashed potatoes and dot with butter. Return to oven for a further half hour to brown. Serve with green vegetable of your choice.
