SAUSAGE & CHICKEN SLICE

2Lb good quality sausagemeat
I tbs Worcestershire sauce
2 oz fresh breadcrumbs
12 oz skinned, boneless chicken breasts
2 oz dried apricots
1 tbs each of fresh chopped parsley and mint
I large egg beaten
Tbs mango chutney

Preheat oven to 180C.

Grease and base line a 2lb loaf tin.

Place sausagemeat in a Large bowl and mi in the Worcester sauce and breadcrumbs. Season well.

Take ¾ of the mixture and line the base and sides of the tin.

Cut the chicken into medium size chunks and put in a bowl, Add chopped apricots, herbs and egg - mix together.

Spoon into the loaf tin and place rest of sausagemeat on top to make a lid. Pinch the edges together to seal. Cover with foil and place the tin inside a roasting pan. Fill pan with water to come halfway up the sides of the loaf tin. Cook for I½ hours.

Remove foil and drain oft any liquid.

Brush top with mango chutney and cook without foil for 15 mins.

Remove from tin and serve hot or cold.

Excellent to take on a posh picnic!
