SAUSAGEMEAT AND APPLE SUPPER DISH

(Serves 4)

1½ lb (700 g.) pork sausagemeat or sausages skinned
1 tin (400 g.) tomatoes
1½ tsp. mixed dried herbs
Salt and pepper
2 cooking apples. cored, sliced and par cooked
Breadcrumbs, dried
Sprig parsley. to decorate

Place apple on base of an ovenproof dish. In a large bowl mash sausagemeat and tomatoes together and mix in herbs, salt and pepper. Pile this mixture on top of apple. Sprinkle top well with breadcrumbs.

Bake at Gas Mark 5, 190C 375F for about one hour. Decorate with parsley.

This dish is delicious with jacket potatoes and vegetables.
